The Holy month of Ramadan is here and that means you can expect the best in terms of cuisine! In line with that, ten seasoned and upcoming chefs from Dubai have teamed up to give a their take on unique Ramadan recipes. From a stir-fried Emirati ouzi to an Arabic coffee choux pastry, this one’s got it all to satiate every foodie. The fourth edition of Ramadan Recipes Guide, an initiative by Brand Dubai is out now and it’s bigger and better, this time around.
Brand Dubai has partnered with 10 Dubai-based chefs and 10 homegrown restaurants to launch the 4th edition of the Ramadan Recipes Guide. Launched as part of the ‘Proudly from Dubai’ initiative to celebrate the start of Ramadan, the guide features 30 delicious, simple-to-prepare recipes inspired by Dubai’s diverse food culture.
The ‘Proudly from Dubai’ is an initiative of Brand Dubai that seeks to support innovative homegrown businesses and talents by offering them media exposure among local and global audiences. The campaign aims to celebrate Dubai’s “culinary diversity and unique cultural blend”. The past editions of the Ramadan Food Guide only featured recipes from restaurants and cafes. This year however, Brand Dubai has tapped 10 of the city’s most popular chefs.

what’s in this year’s ramadan food guide?
The recipes in this year’s guide incorporate flavors from a variety of cuisines, including Scandinavian, Italian, Mexican, and Emirati. Also featured are recipes for vegetarians and those with gluten intolerance, as well as healthier foods.
Among the well-known chefs and their Ramadan dishes featured this year is Izu Ani, who shares his recipe for harissa prawns. Ani is the brain behind some of Dubai’s most well-known eateries, including Gaia, La Maison Ani, and Alaya. Besides, the executive chef of Emirates Flight Catering, Saud Al Matrooshi, is also part of the guide and provides the recipe for the aforementioned riff on Emirati ouzi. Al Matrooshi creates the Arabic menu items for the airline’s in-flight services, as wwell as oversees the business’ Emirati Kitchen Catering division.
Chef Shaheen demonstrates how to make his take on beef stroganoff, representing Iraqi cuisine with contemporary sensibilities. The celebrity chef owns a restaurant in Dubai called Yaba where he serves his interpretation of Iraqi cuisine. He joined the UK cooking competition show MasterChef in 2020.
Chef Karim Bourgi’s chocolate flan recipe demonstrates his skill with sweets. He was recognized this year by the World’s 50 Best organization as Mena’s Best Pastry Chef.

Spotlight on emirati chefs
Also included in this year’s guide is a dedicated corner for Emirati chefs. Names like Amna Al Hashemi, who owns Mitts and Tray restaurant, Chef Mohammad Al Banna, chef Maitha Al Warshaw and chef Arwa Lootah have showcased some of their signature recipes as part of this year’s Ramadan food guide.
Recipes from restaurants
This year, ten restaurants are participating in the guide, and to complete the 30-day recipes list, each of them has contributed two Iftar and Suhoor ideas.
One of them is Bait Maryam, headed by Salam Dakkak, Mena’s Best Female Chef 2023. The restaurant serves Middle Eastern cuisine and is Bib Gourmand-rated by Michelin. She provides instructions for making halawet el jibn and aubergine fattah for the guide.

Terra Eatery, TBK, Fat Uncle, The Bread Basket, and Maria Bonita are among the additional restaurants taking part. They share recipes for a variety of dishes like sourdough Emirati qirs, almond coconut basbousa with cream, and no-bake rutab custard casserole etc.
