Bombay Borough, the popular Indian bar and eatery in Dubai’s DIFC, is marking its fifth anniversary with a limited-time, 5-course menu that highlights the culinary diversity of India. This special menu, available from January 22nd to 31st, 2025, takes diners on a flavorful journey through five Indian states—Jammu, Telangana, Rajasthan, Odisha, Uttar Pradesh, and Maharashtra. Priced at AED 295 per person, it combines traditional recipes with modern techniques and global influences.
What to Expect on the 5th Anniversary Menu
A Unique Start: Amuse-Bouche
The dining experience begins with Miso Dal Bafla, a delightful fusion inspired by Madhya Pradesh. It features Kashmiri chili miso that is home-fermented, adding a tangy twist to the traditional dish. Accompanying this are regional snacks like Chorafalli with papaya salsa, Kordoi paired with fermented plum ketchup, and Naga bread served with bhoot butter—a nod to the states of Gujarat, Assam, and Nagaland.
Small Plates That Delight
Jammu’s rich culinary heritage shines through in dishes like Kachalu Carpaccio, a creative take on braised taro, and Kalari Kulcha, which uses the iconic Kalari cheese from Jammu alongside saffron apple granita. The cheese, deeply rooted in local history, reflects the craftsmanship of Gujjar nomads who migrated to the region centuries ago.
Grills with a Story
Grills take center stage with flavors from Uttar Pradesh, offering Tundey Lamb Skewers infused with mint cream and smoky Chicken Gutwa Kebabs, both inspired by Lucknow’s legendary kebab culture. Vegetarian options include Oyster Mushroom Kakori served with truffle aioli. Guests can pair these with a refreshing Blueberry Mahua beverage, a non-alcoholic delight fermented in-house.
Main Course: A Feast of Flavors
After a refreshing Gorkeri Mango Sorbet, diners can enjoy Maharashtra’s Dhangar Chicken Curry, Pomfret Hirwa Kalvan, and Hyderabadi Murg Biryani.
Sweet Endings
The menu concludes with desserts inspired by Odisha, such as Chena Poda Basque, a banana leaf-baked delicacy, and Grilled Peach Khaja served with tulsi ice cream. These dishes reflect the state’s festive traditions. A cup of handmade Bihar Doke Black Tea and a selection of petit fours complete this indulgent experience.
